- 1 lb Ground Turkey
- 2.5 cup Fresh Cauliflower Rice (1/2 a large head of cauliflower, finely pulsed)
- 1.5 tbsp Olive Oil
- 1 Clove of Garlic, minced
- 1 tsp Ginger, freshly grated
- 1 tbsp Apple Cider Vinegar
- 1 tsp Honey
- 1 tbsp Fresh Cilantro, chopped (optional)
- Butter Lettuce Leaves
- Salt, to taste
Directions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and grated ginger; cook 30 seconds until fragrant (do not brown).
- Add ground turkey and cook until fully browned, breaking into small pieces. Season lightly with salt.
- Add cauliflower rice directly to the skillet.
- Cook 6–8 minutes, stirring frequently, until cauliflower is very soft and moisture has cooked off.
- Stir in apple cider vinegar and honey; cook 1–2 minutes to allow flavors to meld.
- Remove from heat and fold in fresh cilantro if using.
- Spoon mixture into butter lettuce leaves and serve warm.
