- 1 lb Ground Beef
- 2 Zucchinis, sliced
- 2 cup Green Cabbage, finely chopped
- 1 Clove of Garlic, finely minced
- 2 tbsp Olive Oil
- Salt, to taste
- Fresh Parsley (optional)
Directions
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add minced fresh garlic and cook 30 seconds until fragrant (do not brown).
- Add ground beef and cook until fully browned. Season lightly with salt.
- Remove beef from skillet and set aside.
- Add remaining 1 tbsp olive oil to the skillet.
- Add finely chopped cabbage and sauté 5–7 minutes, until very soft and lightly sweet.
- Add zucchini and cook an additional 3–5 minutes until tender.
- Return beef to skillet and stir to combine.
- Finish with fresh parsley, if using. Serve warm.
