- 1.5 cup Blanched Almond Flour
- 2 Large Eggs
- 1 Medium Apple, peeled and finely grated
- 1 tsp Honey (optional)
- 0.5 tsp Cinnamon
- 0.25 tsp Baking Soda
- Salt
- Olive Oil or Butter for Cooking
Directions
- Place grated apple in a small pan with 1–2 tbsp water. Cook 3–5 minutes until very soft and lightly fragrant. Let cool slightly.
- In a bowl, whisk eggs and honey (if using).
- Stir in cooked apple and cinnamon.
- Add almond flour, baking soda, and salt. Mix until smooth.
- Heat a skillet over medium-low heat and lightly grease.
- Spoon batter into small pancakes.
- Cook 2–3 minutes per side, flipping carefully once set.
- Serve warm.
