- 1 cup Cooked Quinoa
- 0.5 cup Shredded Zucchini (squeezed dry)
- 0.25 cup Shredded Cheddar (lactose-free if needed)
- 1 Egg (or egg free binder for EoE symptoms)
- 1 tbsp Olive Oil
- Pinch of Salt
Directions
- Mix all ingredients in bowl. Spoon into greased mini muffin tin.
- Bake at 375°F for 18–20 mins until golden. Cool before serving.
