- 8 Eggs
- 0.5 cup Spinach, cooked and finely chopped
- Olive oil, for pan
- 0.5 cup Red pepper, roasted, peeled and diced (optional)
- Salt
Directions
- Preheat oven to 350°F (175°C).
- Lightly oil muffin tin.
- Whisk eggs; fold in vegetables.
- Pour into muffin cups.
- Bake 18–22 minutes until set.
- Cool slightly before serving.

- Phase 2–3: From week 10 you may add ½ cup roasted red pepper peeled and diced to your recipe if desired.

- Soft: Chop finely after baking
- Sensitive tolerance: Omit red pepper
