- 1.5 lb Boneless, Skinless Chicken Thighs or Breasts
- 3 tbsp Extra-Virgin Olive Oil
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1 tsp Paprika
- 0.5 tsp Dried Oregano
- 2 cup Cooked Rice, Brown or White
- 1 cup Cucumber, diced
- 1 cup Tomato, diced
- Salt, to taste
Directions
- Preheat oven to 400°F (205°C).
- Toss chicken with olive oil, spices, oregano, and salt.
- Bake on a sheet pan for 25–30 minutes until internal temperature reaches 165°F.
- Slice chicken and serve over rice with cucumber and tomato on the side.
