- 1 Black Beans (15 Oz Drained & Rinsed; IBS safe if beans are tolerated)
- 2 Eggs
- 0.25 cup Cocoa Powder
- 0.25 cup Maple Syrup or Honey
- 2 tbsp Olive Oil
- 0.5 tsp Baking Powder
- 1 tsp Vanilla Extract
- Pinch of Salt
Directions
- Preheat oven to 350°F.
- Blend all ingredients in a food processor until smooth.
- Spoon batter into greased mini muffin tin.
- Bake for 12–15 minutes, until centers are set.
- Cool completely before removing.
