- 4 Medium Potatoes
- 2 cup Shredded Cooked Chicken
- 2 tbsp Olive oil
- Dried Parsley or Oregano
Directions
- Bake potatoes at 400°F until very soft (45–60 minutes).
- Split open and mash interior.
- Top with chicken, olive oil, and herbs.
- Bake an additional 10 minutes.
IBD Note:
- Phase 1: Allowed
- Phase 2: Allowed. From week 10 through week 12 you may substitute ½ sweet potato if desired.
- Phase 3: Allowed. May also substitute sweet potato.
Texture Modifications:
- Mashed: Mash potato fully; mix chicken throughout
- Pureed: Blend chicken and potato together
- Early phase: Substitute white potato if needed
